Ingredients: olive oil- cooked beans- salt and pepper
Heat 3 tablespoons of oil in a frying pan over medium heat (a non-stick pan is best)
Add about 2 cups of cooked beans with some broth. Mash the beans in the oil with a bean or potato masher (or with a fork). The broth will reduce, and the beans will dry.
Add a cup at a time of the remaining cooked beans and broth with additional oil, as you want. Mash until puree is achieved. (Time about 10 minutes.)
Add salt and pepper to taste. Frijoles refritos thicken as soon as the pan is removed from the heat. The beans may be served, or they may be cooled, refrigerated, and served the next day, again reheated with more oil.
Variation: Heat oil and sauté 1 large onion, chopped. Stir in ½ cup (or to taste) canned jalapenos (hot green peppers), chopped. Add refried beans and mix. Serve hot.
